Toby Tin

Clean, light and creamy, the Toby Tin cocktail is a take on the classic Julep. Named after the famous giraffe, the Toby Tin has the flavour profile reminiscent of a 1968 spearmint milkshake, an ode to the "longest drink in town." Prepare to be refreshed by this new age classic.

45ml Scapegrace Vodka

5ml Sugar Syrup

10ml Creme De Cacao Blanc

Dash of Peychaud bitters

Small handful of fresh mint leaves to garnish

Method: Into a chilled "Toby Tin" add all ingredients apart from the mint. Add a handful of crushed ice and stir. Add some additional ice and a few mint leaves, again stirring. Finish by capping the top of the drink with packed crushed ice and garnish with a big sprig of mint and a small metal straw.

Copra Coup

A bright, zesty & textural cocktail with Scapegrace Vodka. A celebration of the complex flavours that can be taken from the flesh “copra” of the Coconut, we create a sour yet savoury experience truly enhanced by Scapegrace Vodka’s natural satin texture. To do this we incorporate coconut milk as the emulsifier instead of egg white.

45ml Scapegrace Vodka

20ml Fresh Lemon Juice

15ml good Quality Coconut milk

10ml 1:1 Sugar Syrup

Fresh Coriander

Method: In a tin on tin shaker, pack the top large tin with ice cubes and dry shake all ingredients hard, fine strain into a chilled coupette glass and garnish with fresh coriander.

A luxurious twist on an old classic, this martini plays on texture alongside both savoury and sweet elements to create a tranquil level of “umami” - crisp, delicate and complex.

60ml Scapegrace Vodka

1 dash Orange Bitters

10ml Bianco Vermouth

5ml Olive Brine

Garnished with an Olive

Method: Add all ingredients to a frozen mixing glass, pack with cubed ice and stir until glasses frosted and amply chilled. Strain into a low glass, garnish with a large olive or caper-berry on a bamboo spike.

Scapegrace Spritz

45ml Scapegrace Vodka

1 dash Peychaud bitters

30ml Pear syrup or Fresh Juice

20ml Dry Vermouth

15ml Honey Syrup

Topped with Soda water

Garnished fresh pears and mint

Method: Add all ingredients to the glass, pack with ½ ice, top with soda to ½ way, give it quick stir and them pack further with ice, top with soda to the top and garnish with fresh pear and mint.

30ml Cold Drip Coffee Concentrate

15ml Coconut water

Shake gin & juice

Top with soda

Lime garnish

Method: Add all ingredients to a shaker tin, pack with ice and shake hard until the tin is frosted, fine strain over large format ice into a short glass and garnish with flaked coconut.
